Spinach dip:
3 cups of chopped spinach
1 cup non fat greek yogurt
1 clove of garlic
2 tablespoons olive oil
Salt and pepper to taste
1/2 cup low-fat mozzarella cheese
1 cup baby carrots (or any other vegetable of your choice to dip with)
1) Blend spinach and yogurt with 2 tablespoons of water until very
smooth (you may leave chunks of spinach if you like a chunkier dip).
2) add in garlic, olive oil, salt and pepper and blend until combined.
3) pour mixture into a microwave safe bowl and sprinkle cheese on top.
Microwave for one minute or until the cheese is melted and golden.
4) serve immediately with baby carrots or any other vegetable of your choice.
Black bean dip:
1 can of black beans (already cooked)
1 garlic clove
1/8 cup cilantro
3/4 teaspoon cumin
Juice of 1 lime
1 teaspoon olive oil
Salt and pepper to taste
Enjoy with your choice of vegetables
1) add all ingredients to a blender and blend until smooth.
