Ingredients
2 cups of chopped spinach (or any other lettuce of your choice)
1/4 cup of red grape tomatoes (cut in half)
1/4 cup baby carrots (cut into small pieces)
1/4 cup corn
1/4 chopped cucumbers
1/4 cup blueberries
1/4 cup purple lettuce (we used romaine)
Vinaigrette of your choice (we used oil and vinegar)
Steps
1) place spinach cat the bottom of the bowl (keep in mind this is the
bowl that the salad will be served in)
2) place all ingredients (except for vinaigrette) on top of the
lettuce in rainbow order.
3) drizzle with your favorite dressing and serve immediately (a 50/50
mix of balsamic vinegar and olive oil tastes great!)
